While you can bake any type of bacon in the oven, my personal recommendation is center-cut bacon. Its uniform thickness across the strip ensures even cooking and crispiness. Thick-cut bacon can certainly be baked, but it will require a longer cooking time, typically an additional 5 to 10 minutes, to reach the desired level of crispness. Feel free to experiment with your favorite bacon – the oven method is forgiving and adaptable.
Baking Bacon: Rack or No Rack?
For optimal crispiness, using an oven-safe baking rack placed inside your baking sheet is highly recommended. Elevating the bacon allows hot air to circulate fully around each strip. This promotes even cooking and eliminates the need to flip the bacon halfway through. Furthermore, the rack allows rendered grease to drip away from the bacon, resulting in even crispier results.
If you don’t own a baking rack or prefer not to use one, you can still achieve fantastic oven-baked bacon. Simply arrange the bacon directly on a baking sheet. In this case, flipping the bacon halfway through the cooking time is essential to ensure even crisping on both sides.

The Secret Oven Temperature and Technique
The ideal oven temperature for baking bacon is 375°F (190°C). However, the real secret to incredibly crispy oven bacon lies in starting with a cold oven. Placing the bacon in a cold oven and then turning it on allows the fat to render slowly as the oven heats. This gradual rendering process is key to achieving maximum crispiness and preventing the bacon from becoming tough or chewy. (The exception to the cold oven rule is when making candied bacon, where a preheated oven is necessary for quick sugar caramelization).
While 375°F is my preferred temperature, the oven method is quite versatile. If you’re already using your oven for other dishes, you can bake bacon at almost any temperature. Just be sure to monitor it closely, especially at higher temperatures, to prevent burning.
Storing and Reheating Your Oven-Baked Bacon
Leftover oven-baked bacon is easy to store and reheat. Once cooled, place the bacon in an airtight container and refrigerate for up to 5 days. To reheat, you can gently warm it in a skillet over low heat to maintain crispness, or use a microwave in short, 15-second intervals.
For longer storage, oven-baked bacon freezes exceptionally well. To prevent sticking, freeze the strips individually on a parchment-lined sheet pan or layer them between pieces of parchment paper in a freezer-safe container.
